What should I take along for my 4 month old baby when we travel out of the country for 2 weeks?

So, around mid December, my husband, and baby girl (who will be 4 months at the time) are planning to go to Mexico (drive by car which is about a 28 hour ride)

What things should I take along with me? I feel like I need so much since it is 2 whole weeks, but yet I can’t take so much cause not a lot fits in our car. Heres what I’m taking and or thinking of taking the following (let me know if you think I should leave it at home or take it, or suggest more ideas)

For sure taking these Things:
Car Seat (for sure obviously)
Sling Carrier-since there will be days when we want to walk around town and in the car there will be too much traffic
Wipe Warmer (Its Mexico! So its very cold)
Lots of Blankets

I’m thinking of taking the following:
Stroller-cause since we are visiting both mine and both of my husbands families we are never home, and at night my baby is already used to sleeping in stroller when we are at other peoples houses. But my husband says it takes up a lot of space.

Jumper-she loves it

Bumbo Seat-to sit down every now and then instead of being held

Boppy Pillow-for tummy time

What do you think? Am I taking too much? What should I leave? How about the stroller? are there some strollers that don’t take up a lot of space, but yet have to lay down? Cause the one I have is a travel system so it is quite huge. Thanks
